Old Fashion Recipes

Growing up I remember my grandmother’s old fashion recipes. She always had these Hugh Meals on Sundays after church and invited everyone in the family. (Daughters, aunts, cousins, grandchildren, minister, etc) I never knew how she could get so much food cooked and ready to serve and still go to church. And she always made a big breakfast before church!

I can still remember the big feather bed and the smell of those country breakfasts. Homemade biscuits and what my grandpa called “red*eye-gravy.”

How did she make those meals?

Grandmother didn’t have air fryers or crock pots, although she did have a pressure cooker. I still remember the day it “blew” and we had homemade spaghetti all over the ceiling and kitchen from one wall to the other !! But she made the best ever spaghetti with pork chops !! I never have been able to come close to how hers tasted.

Breaded Air Fryer Pork Chops

I bet Grandmother wished she had had a Nu-wave air fryer !!!! I have used mine for many years and still can’t do what she did!

Want perfectly tender and juicy pork chops in 10 minutes? Using your air fryer and just a few ingredients. You can use different crouton flavors to give this variety.

Total:20 min

Servings: 4

Ingredients

4 boneless, center-cut pork chops

1 teaspoon Cajun Seasoning

1 1/2 up cheese and garlic-flavored croutons

2 large eggs

cooking spray I use Pam Butter Flavor Non-Stick Cooking Spray about 5 fl

Directions:

Preheat the air fryer to 390 degrees F (200 degrees C)

Place pork chops on a plate and season both sides with Cajun seasoning.

Pulse croutons in a small food processor until they have a fine consistency; transfer to a shallow dish. Lightly beat eggs in a separate shallow dish. Dip pork chops into eggs, letting excess drip off. Coat chops in crouton breading and set a plate. Mist chops with cooking spray. Then spray the basket of the air fryer with cooking spray and place chops inside, making sure not to overcrowd the fryer. You may have to do two batches depending on the size of your air fryer.

Cook for 5 minutes. Flip chops and mist again with cooking spray if there are dry or powdery areas. Cook 5 minutes more. Repeat with all pork chops if you have to do it in batches.

You can keep chops warm in the oven on the lowest setting while finishing the last chops. If chops are thicker add an extra minute to the cooking time and if very thin cook 1 minute less. ( remember like ovens some might be hotter than others, so adjust accordingly ) Hope you enjoy it!!

Mexican Wedding Cake

Mexican Wedding Cake

Grandmother’s famous Mexican Wedding Cake was a favorite of the family.

Ingredients:

2 cups flour sifted with 1 tsp baking soda and 1/4 tsp salt

2 cups sugar

1 sm can crush pineapple with juice

2 cups chopped pecans.

Mix thoroughly and bake at 350 degrees for 35 to 40 minutes.

Using 9″x 13″ baking dish greased with a little cooking oil.

Icing:

1 1/2 cups powdered sugar

1/2 stick butter or margarine

4 oz cream cheese

1 tsp amaretto

1/2 vanilla

cream softened cream cheese and butter or margarine

Add sugar and flavoring and spread on cake

I love finding these old-fashioned recipes.

** 1 cup of coconut can be added but she didn’t like coconut

Grandmother loved baking. I loved to go into the kitchen for a piece of cake right out of the oven. Here’s another of hers I found.

Cherry Chocolate Cake

Cherry Chocolate Cake

Devil’s food cake mix that has the pudding with it.

2 eggs

1/2 c sour cream

12 oz can cherry pie filling

1 tsp almond extract

Mix all together and bake at 350 degrees for 35-45 minutes

Topping:

2 1/2 cups powdered sugar

6 oz semi-sweet chocolate chips

4 Tbs butter

Top with can cherries or natural cherry on top
